I take it model instance in the video was placed via scene2.bin? The easiest option to create collisions for it is to select the instance's mesh object (Y + LMB, assuming you're using Mafia Editor v0.4.0 or later) and hit CTRL-K. Select Face as type, set Flags to 0 and specify the collision material you want to use (4 or 33 might be good candidates).

A more lightweight approach would be to approximate the model's surface using primitives like boxes, spheres or cylinders but this currently requires a bunch of manual work to make sure everything lines up with the visual geometry.
